Over at Gongbei side, I remember the Diplomatic lane is open for those rushing for airport in the morning. Look for signs or ask Police stationed there. But you must show proof, ie. air ticket.

Macau side also crowded but more people using the express self-check gate, so clearing using normal way, long queue but don't take long.

After clearing both customs, take a cab. Bus to Venetian don't start that early. If runs out of HKD, just proceed down slightly further and there will be a money changer.

For Macau, only in Casino that they accept HKD.
you are able to use MOP in all other area when in Macau.

When in Macau, most of the transport are FOC if you are taking it to-n-fro the Casino.

Cab price are $13MOP when you board, do dial for a cab, it doesnt have extra charge even when after Midnight. and no Peak hour, no ERP.

The Local Food start from $30 Mop.

However, a full size meal at Macdonal will cost you just below $24 Mop.

Some Casino serve cheap meal too, some even provide free meal with you accumulate a few point on the membership card. ( Grand View @ Taipai is not bad, you can get a $45Mop Vocher within 1 hour of play )
